With Christmas upon us, the Vitellone family come together to continue the family traditions passed down the generations. Whether preparing savory or sweet dishes, it is a family affair, and we love the time spent continuing what our Nonna, and other family members have taught us over the years.
What will the Vitellone’s be serving on Christmas Day?
The main highlight of Christmas lunch for the Vitellone’s and so many other Italian families is a first course of lasagna. It is a family tradition passed down from our Nonna Marietta who oversaw the handmaking of the thin pasta slices, preparing the homemade tomato-based pasta sauce, the grated mozzarella and Parmigiano Reggiano to bind each layer – all elements marrying beautifully together. Although the lasagna is prepared the day before, it is cooked on Christmas Day, to be served to family and friends joining on the day.
There are many takes on lasagna, but Vincisgrassi, is Le Marche Region’s version of this famous dish
With our close ties to Le Marche Region, we wanted to bring attention to a tradition from the city of Macerata. You would be forgiven for calling Vincisgrassi a lasagna, but this delicious marvel is lasagna but no as you know it. A classic Sunday dish traditionally served by Nonna or Mamma, this Le Marche tradition features seven layers of hand-rolled pasta and a traditional meat sauce drenched in béchamel. What makes Vincisgrassi different to lasagna is all in the sauce, Vincisgrassi’s sauce contains all sorts of mixed meats; pork, goose, duck, chicken – that’s right, they don’t use beef. It is then garnished with lightly-browned chicken giblets.
